Greenwashing in the Egg Industry

Greenwashing is common in the egg industry, with misleading labels making eggs seem more ethical or high-quality than they really are. Here are some ways it's done:

  • Pasture-Raised – While this sounds like hens are freely roaming, the term isn't legally defined in many places, and conditions can vary greatly. Some brands use this term with minimal outdoor access.
  • Organic Eggs – These eggs meet USDA organic standards (no synthetic pesticides, antibiotics, or GMOs), but that doesn’t guarantee the hens had good living conditions beyond meeting the minimum requirements.
  • Cage-Free – This means hens aren’t kept in battery cages, but they may still be packed into large barns with limited space. They often don’t have outdoor access.
  • Free-Range – Hens must have some outdoor access, but there’s no requirement for how much time they actually spend outside or the quality of that space.

How to Store and Preserve Eggs

 

So you always have some on hand!

  1. Freezing Whole Eggs – Crack eggs into a bowl, whisk them together, and pour into an ice cube tray or silicone muffin tin. Freeze, then transfer to a bag for long-term storage.

  2. Freezing Egg Whites & Yolks Separately – Great for baking! Add a pinch of salt or sugar to yolks before freezing to prevent them from turning gelatinous.

  3. Make-Ahead Quiche – Cook a quiche, let it cool, then freeze slices for a quick and easy meal. Watch the video for my mini-quiches.

  4. Breakfast Egg Muffins – Whisk eggs with veggies, cheese, and meat, then bake in a muffin tin and freeze for meal prep.

  5. Dehydrating & Powdering Eggs – If you have a dehydrator, you can make your own powdered eggs for long-term storage!

 Egg prices may be unpredictable, but with these storage and preservation methods, you’ll always be prepared!
