Healthy Breakfast Granola Cereal Alternative
This delicious, easy to make and keep on hand granola breakfast cereal alternative will fuel your body with good nutrients, give you solid brain food so you think and perform better, and won't subject you to being hungry an hour after eating.
It's kid friendly and fun to actually make with your kids.
Nutty “Granola” Clusters
1 cup raw Brazil nuts, roughly chopped
½ cup raw pecans, chopped
⅓ cup raw pumpkin seeds (also called pepitas)
½ cup coconut flakes
⅓ cup raw buckwheat groats (Bob’s Red Mill Brand)
2 large egg whites (preferably pasture-raised, but not necessary)
⅓ cup maple syrup
2 tablespoons unsweetened applesauce
1 teaspoon vanilla extract
3 tablespoons raw nut butter such as almond or cashew
1 teaspoon ground cinnamon
¼ teaspoon Himalayan salt
Preheat regular or toaster oven to 285°F and line a small baking sheet with parchment paper.
Mix Brazil nuts in a bowl with pecans, pumpkin seeds, coconut flakes, and buckwheat groats.
In a separate bowl, whisk egg whites until frothy. Add the maple syrup, apple sauce, vanilla, nut butter, cinnamon, and salt to the egg mixture and whisk until combined.
Pour wet ingredients into the bowl of nuts and mix well.
Spread mixture evenly on the baking sheet and bake for 45 minutes, do not stir.Turn off oven and allow granola to sit with the oven door cracked to cool.
Once cooled, break into clusters and serve with your choice of greek yogurt, cottage cheese, nut or regular milk.
Add berries and other toppings as desired!
Store in an airtight container for future use.
