Savory Comfort In a Bowl
As the seasons shift and the chill of autumn begins to linger, there's nothing quite like the warmth and comfort of a steaming bowl of soup. And, to be honest, I make and eat this all year round!
Here's my classic, more healthy twist on a classic favorite! Substitute anything out such as Almond or regular milk for coconut, etc.

Ingredients:
- 1/4 cup Olive Oil
- 1 Medium Onion, Diced
- 3 Celery Ribs, Diced
- 1/2 cup chopped red and green pepper (optional)
- Pinch of Salt
- 3 Cloves Garlic, Chopped or 1 heaping TBS minced from jar
- 2 cups Organic Vegetable or Chicken Broth
- 28 oz Can Crushed Tomatoes or 10-12 whole tomatoes roasted
- 1 small can tomato paste
- 1/4 cup Almond Flour (or regular flour)
- Salt and Pepper to taste
- Pinch of Stevia sweetener or swirl of honey, maple syrup or Agave Sweetener
- 1 cup coconut cream, coconut milk (or heavy whipping cream)
- 1/2 cup goat yogurt
- 1/2-3/4 cup red wine (optional)
- 3 tablespoons chopped basil leaves
Instructions:
Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onions, celery, and peppers (if using), along with a pinch of salt. Sauté until the vegetables are softened and fragrant, about 5-7 minutes. Stir in the chopped garlic and cook for an additional minute.
Add the Tomatoes: Pour in the crushed tomatoes or roasted whole tomatoes along with the tomato paste. Stir well to combine with the sautéed vegetables. (This photo is after I roasted them in an Instapot!)
Thicken the Soup: Sprinkle the almond flour (or regular flour) over the tomato mixture and stir until well incorporated. This will help thicken the soup and give it a creamy texture.
Season and Simmer: Season the soup with salt, pepper, and your choice of sweetener (Stevia or Agave). If using red wine, pour it into the pot at this stage. Allow the soup to simmer for about 20-25 minutes, stirring occasionally, to allow the flavors to meld together.
Blend and Finish: Once the soup has simmered and thickened, remove it from the heat. Using an immersion blender or a regular blender, carefully blend the soup until smooth and creamy.
Add Creaminess: Return the blended soup to the pot if using a regular blender. Stir in the heavy whipping cream (or coconut milk) and goat yogurt until well combined. This will add a luxurious creaminess to the bisque.
Garnish and Serve: Finally, stir in the chopped basil leaves just before serving. Ladle the tomato basil bisque into bowls and garnish with additional basil leaves if desired. Serve hot alongside crusty bread or a simple salad for a complete meal.
